I love recreating classic recipes. I mean, they’re classics for a reason aren’t they? Chicken and Corn soup is one of the dishes that I can serve to my family and it’s guaranteed that everyone will love it. I don’t have to change anything about it to suit the kids either, they eat it as it is and love it.
When I make it at home I make it with rice noodles, which I’ve included instructions for in the recipe.
The best part about this tasty dish? It makes a huge amount, about 5 litres to be exact! Enough to feed a family of five for lunch and dinner for two days OR enough to freeze half of for an already done meal for busy nights.
Now, it’s not quite cool enough where I live in Queensland to even entertain the thought of soup, but it’s a great recipe to have on hand when it is.
