It’s my birthday week! It’s always a bit weird when you have a birthday mid-week though right? We’ve kind of spread out the celebrations, which I’m not about to be honest. We had my parents and parents-in-law over on Wednesday (my actual birthday), tonight we’re going bowling with the extended family because I’m truly just a big kid and it’s just such a fun thing to do with the family, even though I am a legitimately terrible bowler. Seriously, it’s funny to watch but I still love it!
Ryan’s taking me to dinner on Saturday night, which I’m super excited about. We’re going to a Japanese restaurant - I’ll try and remember to take photos on the night but will definitely give you a review next week!
Aaaand I’m catching up with some friends on Sunday and then again in April for a bit of a birthday celebration for the March/April babies. So I guess you could say it’s a bit of an extravaganza. And I’m only turning 38, imagine when I turn 40!
Currently reading… Atomic Habits by James Clear. Ok, I think every book that I have picked up recently has been exactly what I’ve needed to read at that time. I’m only about 30 pages into this book but it has opened my eyes enormously already. I can already see how it’s going to help me get more out of my days and reduce time wasting. But, like I said, I’m only about 30 pages in so I’ll give you an update soon!
I have no recommendations for what to watch because I’m still on my Grey’s Anatomy train for the foreseeable future.
To the recipes!
What’s Cooking This Week
This plant-based smoothie is so incredibly delicious and if you love an iced coffee then I just know you’ll love my Espresso Smoothie. Basically because it’s like an iced coffee only better.
Gluten Free Choc Chip Pumpkin Loaf
Ok, so I get that it isn’t the height of pumpkin season but we’re pretty lucky that in Queensland you can get most fruit and veg year round, bar a few. But my daughter loved this gluten free choc chip pumpkin loaf and has been begging me to make it again so it’s on the menu this week.
Sheet Pan Pesto Chicken & Vegetables
Because who doesn’t love a one tray baked diner? Especially for during the busy week!
I love having a salad dressing made up in the fridge, ready to level up even the most boring of salad veg for lunch. Because life is too short to eat boring food.
Enjoy!
